Old Fashioned Caramels
Total Time In My Experience: 2 1/2 hours
Recipe from my old coworker, Gail.
√ 1 cup butter
√ 2 1/4 cup firmly packed brown sugar
√ 1 c. light corn syrup
√ 14 oz. sweetened condensed milk
√ 1 1/2 tsp. vanilla
(√waxed paper cut into squares to wrap later)
1. Butter 9" square pan (I used a 9x13 pan)
2. In a heavy 3 qt. squcepan, melt butter.
3. Add sugar and mix well.
4. Stir in corn syrup, cook until sugar dissolves. Remove pan from heat.
5. Stir in sweetened condensed milk.
6. Cook over medium heat, stirring constantly, until mixture reaches 240 degrees Fahrenheit on a candy thermometer (20 to 30 minutes).
7. Remove from heat, stir in vanilla.
8. Cool, cut and wrap. (I found it easiest to cut when it was cooled in fridge!)
9. Store in fridge.
(My coworker also dips hers in chocolate.......chocolate covered caramels! Sounds delicious...I'll do it someday!)

NOTE: Very important to get to the right temperature on the candy thermometer!
Joe told me that he can't decide which of these two things I make the best: cheesie potatoes (and you all know that's my specialty) or caramels! I think that says a lot about these caramels!!!
