YUM-O!
Seriously...I crave this beef stroganoff!! It's a classic "comfort food" dish and warms you up on a chilly day! This is a recipe Mom had although I don't really recall her making this for us as we were growing up!
Beef Stroganoff
Ingredients:
*2# beef--cut into pieces or strips
*1/2 tsp salt & pepper
*1 stick butter
*chopped onion
*1 can beef broth
*mushrooms (8 oz. container)
*1/3 c. sour cream
*wide egg noodles or rice to serve
Directions:
1. Melt 1 stick salted butter and brown the meat.
2. Add chopped onion & 1 can beef broth.
3. Simmer about an hour until the meat is tender.
4. Add mushrooms and thicken with some flour--cook til mushrooms are heated through.
5. Add 1/3 cup sour cream--stir.
6. Serve immediately over noodles or rice.
Serve with some crusty french bread and a side of fruit.
NOTES: The beef can be top sirloin or tip sirloin and I like to buy mine ahead of time at Costco (or Sam's Club)--cut into strips and then freeze in 2 lb packages for Beef Stroganoff night!
NOTES: Use whatever size mushroom container you'd like--I like the mushrooms from the produce department (and not the ones in the can) for this recipe.
This also tastes great for lunch the next day!
I don't know if this would work well frozen (freezing sour cream dishes don't always turn out that great)--but I have made this for dinner for new moms or sick friends and they eat it a few hours later. I just don't recommend making a freezer meal out of this dish.
