-original recipe from here-
I don't make this very often, but when I did this last time Joe told me this is one of his favorites. Huh. I guess I'll have to make it more to please the man of the house. :)
Ingredients:
*9 (6 inch) corn tortillas
*1 pkg ground turkey
*1/2 c. chopped onion
*8 oz jar taco sauce (3/4 c.)
*1 can (4 oz) chopped green chilis, drained
*1 pkg (10 oz) frozen corn, thawed
*1 cup shredded cheese
*1 cup salsa
*sour cream (optional)
*4 cups prepared rice for serving (spanish rice, if wanted?)
1. Preheat oven to 400 degrees.
2. Place tortillas on a baking sheet, bake 4 minutes then turn over and bake 4 minutes more.
3. Grease an 11x7 dish.
4. Brown turkey & onion. Add taco sauce, chilis and corn. Reduce heat and simmer 5 minutes.
5. Break up 3 tortillas and arrange on bottom of greased baking dish.
6. Spoon half of turkey mixture over tortillas, sprinkle with half of cheese, and top with all of salsa (1 cup).
7. Repeat broken tortilla, turkey and cheese layers. Top with remaining 3 broken tortillas.
8. Bake 10 minutes or until cheese is melted and casserole is heated through.
9. Garnish with sour cream and serve over rice.
