Freezing Carrots

FREEZING CARROTS
1. Peel your carrots and cut them up how you want them.
2. Put cut up carrots in pot and cover with water (add salt & some diced onion....maybe even a pat of butter, just because!).
3. Bring to a boil. Stir. Let boil for 3-5 minutes.
(it can be a fine line...you don't want the carrots to be undercooked--need to get rid of bacteria--but, you don't want to overcook them either)
4. Strain carrots (getting rid of hot water).
5. Put carrots back in pot and add cold water and some ice cubes.
6. Let sit in ice cold water for 3-5 minutes.
7. Drain.
8. Package carrots into ziploc freezer bags (can remove air from bag using a straw).

This is how I have done it the past 2 years, but am always looking for new/different ideas.
Email me or leave a comment--I'd love to hear if you have a different way of freezing carrots!

Note: 6 trays of carrots from the Farmers Market (always variable) made 9 bags of diced carrots (2 cup bags) for me in 2013.
