Freezing Green Beans

Freezing Green Beans
I found directions for freezing green beans here!

1. Clean any dirt, grass or leaves off your green beans while they soak in water, then cut to the size you prefer. I cut the tips off but kept the green beans long figuring I can make them smaller later if I wanted! Some people freeze with the tips on or they cut them smaller right away (like green bean soup size).
2. Boil water.
3. Add green beans to boiling water and boil for 3-5 minutes, depending on the size of your beans.
4. Drain water and plunge beans in ice cold water--I did this twice.
5. Lay green beans flat on a paper towel to dry.
6. Put your beans in freezer bags making sure there is little air in bags.
Use the green beans that same winter.

This was my first year freezing green beans so I will let you know how the beans taste come January!!

Note: I learned this tip somewhere on the web...seal ziploc bag leaving just enough room for a straw to fit in and suck out the air in the bag with the straw. Pinch straw, pull straw out and quickly seal that last part. Just an old-school version of a food saver machine for those that don't have one or don't like to use the food saver bags for freezing (like me).

FYI. I froze two trays of green beans from Farmers Market and it made 3 quart-sized ziploc baggies of about 3 handfuls each. (how is that for measurements!!)
