Sour Cream Noodle Bake

original recipe from Pioneer Woman
My mom never made this, but it definitely looks and tastes like something she would have if she would have had the recipe! It reminds me a little bit of Mom's goulash, but a little heartier!
I typically have everything on hand, except the cottage cheese so a little meal planning is necessary (for me).

SOUR CREAM NOODLE BAKE
*1 pound ground beef
*1- 15 oz can tomato sauce
*salt & pepper
*8 oz egg noodles
*1/2 cup sour cream
*12 oz container cottage cheese (1 1/4 cup)
*1/2 cup diced green onions (to taste)
*1 cup shredded Sharp Cheddar Cheese

1. Boil water in prep for noodles & turn oven on to 350 degrees.
2. Brown the beef with onion and salt & pepper.
3. Add can of tomato sauce to cooked beef and get warm.
4. If water is boiling, add noodles and cook to package directions. (~6 minutes)
5. Mix cottage cheese and sour cream.
6. Add noodles to cottage cheese and sour cream mixture. Add green onions too.
7. Grease baking dish (1 1/2 qt dish) and layer: noodles, meat, cheese, noodles, meat, cheese.
8. Bake in 350 degree oven for 20 minutes.

Serve with a salad and crusty French bread.

TIP: I've made this dish ahead of time at lunchtime to pop in the oven for dinner when I'm pressed for time during the 5 o'clock hour!

TIP: This dish can be frozen too (which I've never done). Just use disposable oven-proof pan and seal the top of container with lid or heavy foil to prevent freezer burn.
To cook from frozen: Place in 375 degree oven and bake, covered, for 45 minutes. Remove lid and bake an additional 20 minutes.
